Peach Cobbler

Let me start by telling you how this recipe came to be featured here at This Modern Broad. I never even thought I really liked peach cobbler that much. But recently I was at my Nana’s house and she offered me some. And everything my Nana makes is pure deliciousness so I clearly accepted a helping. AND it was delicious!!! It turns out SHE got it off Pinterest. I decided I had to make this myself at home. My version came out just as good so clearly the recipe is full proof. I made a few modifications to my liking. Fresh peaches lately have been phenomenal. So go run out and buy some before they are all gone!

Peach Cobbler

Ingredients

  • 4-5 fresh peaches (if using canned, about 2 cups of peaches)
  • handful of blueberries and/or blackberries (optional)
  • 2-3 Tablespoons + 1 cup of sugar
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour
  • 1 Teaspoon baking powder
  • pinch of salt
  • pinch of nutmeg
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • Vanilla Ice Cream

Directions

  • Preheat oven to 350 degrees. Spray a 2 quart baking dish with non-stick spray
  • Slice the peaches (if not using canned) and spread them out in a single layer in the dish
  • Sprinkle the top of peaches with 2-3 teaspoons of sugar (depending how sweet you like it! 😉 )

  • In a medium bowl, with an electric hand-mixer*, beat the additional 1 cup of sugar and softened butter together until combined.
  • Add flour, baking powder, salt and nutmeg and mix until just combined. (Batter will be the consistency of cookie dough batter).
  • Using a spatula (or your hands or anything that works), spreads the batter over the tops of peaches. This part is the most difficult of the recipe. The dough doesn’t spread great but do your best. It doesn’t really need to be perfect just try and cover most of the peaches.

  • Bake for 35-40 minutes or until crust is golden brown.
  • Remove from oven and let cool 5-7 minutes before serving
  • Don’t forget to top with a scoop of vanilla ice cream!!

*I wanted to highlight the electric hand-mixer I used. I got a KitchenAid 7 Speed Hand Mixer at my bridal shower and this is the first opportunity I’ve had to use it. It is AMAZING.
